YOU CAN DO THIS....

Sometimes the thought of eating a Whole-Food Plant Based diet, (WFPB), scares people.  It may appear to be too complicated or impractical to eat this way.  But really, it is very simple...you have eaten this food everyday of your life.  For instance, if you have whole-wheat toast with peanut butter and jam for breakfast, have a huge salad with all kinds of vegetables for lunch with breadsticks and a piece of fruit, and for dinner have greens with balsamic vinegar, angel hair pasta with marinara sauce and steamed broccoli with a glass of wine....WA LA....you have eaten a WFPB diet for the day!  You didn't have to shop at a health food store or eat tofu; however I'm not saying you wouldn't want to take advantage of a health food store to try new and exciting things.  This way of eating can be really very simple.

I realize it's not always easy to jump into something like this.  Most of us are used to eating animal foods and processed foods with a lot of their nutritional value stripped away.  Eating a WFPB diet, you'll be eating LOTS of vegetables and fruits--no packaging at all.  This may seem unfamiliar to us at first because the corporate giants want us to remain addicted to their greasy, salty, sugary, chemical-laden products which are making us physically sick and overweight.  

The population of people eating a WFPB diet remains small, but, our numbers are growing rapidly.  More and more people are realizing how important nutrition is to their health and how so many medical conditions can be prevented, stopped and reversed by eating this way.  Because this way of eating is beginning to finally catch on, there are more restaurants offering WFPB dishes than ever before.  

The biggest "challenge" most people face when changing their whole way of eating is the feeling of being different from other people. But, the way I look at it is you are just choosing to avoid animal products...it really is no big deal!  Understand that you will lose weight, have loads of energy, and have optimal health...people will be asking you what you're doing because they want to do it!  This happens all the time.  Yes, from time to time you will probably come across people that think this is just "crazy" as people love to pass judgement, but when you start feeling better, the number on the scale keeps heading south, and you no longer have aches, pains, cholesterol issues, blood sugar issues, etc., you will think it's crazy not to eat this way!

By changing your way of eating, you will become an example to so many people encouraging them to make a change.  You can try this way of eating one meal at a time, one day at a time, or, jump in with both feet and clean your kitchen out of all animal products and processed foods.  Whatever works for you is the right way to begin.  

Decide that you can do this and prepare yourself for a great adventure!!

This recipe is from the book, The New McDougall Cookbook:

CAULIFLOWER-POTATO CURRY


1 large onion, chopped
2 cloves garlic, minced
1/4 c water
1 T ground cumin
1 T chili powder
2 t curry powder
4 c vegetable broth
1 cup lentils
1  15 oz can stewed tomatoes
2 medium potatoes, peeled and chopped
2 c cauliflower florets
1 carrot, sliced
1 c frozen peas, thawed
1/4 c chopped fresh cilantro (optional)

  1. Place the onion and garlic in a large pot with the water.  Cook, stirring for a couple of minutes, then add the spices and stir to coat.
  2. Add the vegetable stock and lentils.  Mix well, bring to a boil, reduce the heat, cover and cook 30 minutes.
  3. Add the tomatoes, potatoes, cauliflower and carrot.  Continue to cook for another 30 minutes.  Stir inthe peas.  Cook for 5 minutes.
  4. Remove from heat and stir in cilantro if using. Serve over brown rice or any other whole-grain.
