WHAT CHOICES WILL YOU MAKE TODAY?

I have this quote blown up and plastered on the front of my refrigerator reminding everyone to make really good choices.  That's what life is all about, the choices we make.  Eating healthy is probably one of the most important decisions we make....like anything else, if we make poor choices,  we will live with the consequences.  Unfortunately, the consequences of eating the Standard American Diet, (SAD), is really poor health....we end up with all kinds of chronic illnesses and diseases...including the #1 Killer in America today...heart disease.

However, just by making "tweaks" in our diet's can pay off big.  It's not hard, it doesn't take rocket science, it's just a new and different way of eating....and that can be really exciting!  There are so many different kinds of fruits and vegetables out there, you never have to be bored by eating the same things.  And, it can be really, really simple.  

I found this website last week called FullyRawKristina...She eats a raw food diet, (nothing cooked over 118 degrees, so she does use a dehydrator at times, if you don't have a dehydrator, don't choose recipes requiring one), and she is amazing!  She has some really EASY delicious recipes that are really quick to make.  I tried a couple of them and I will share them with you....they were so EASY and so DELICIOUS!  She has a whole video section showing how to make all kinds of different dishes.  

I tried going totally raw about one year ago, but at the time we were going into the Winter months.  I am a person that is literally COLD ALL THE TIME.  I gave this way of eating a try....felt absolutely fabulous...made all kinds of  new dishes, but I felt I really needed warm and hot foods after a while because I was freezing all the time.  However, since we are now going into warmer weather, I thought I would give raw foods a try again.  Let me tell you....I did not really "change" the food I was eating or the amount I was eating...I just made raw dishes....the scale is dropping like a rock!! I did not change my exercise habits, (I do try and get at least 30 minutes of exercise each day, mostly in the form of jogging, but that has not changed either), and again, nothing really changed with the food I was eating....but, now that I think about this, I may even be eating more now!  

It's a great time of year to get more vegetables and fruits into your diet.  Farmer's markets are popping up all over, road side stands will be next.....all kinds of vegetables and fruits will be coming into season....so take advantage of this.  There are always some kind of vegetables and fruits on sale in the grocery stores each week...get what's on sale and whip up a dish.....Remember, there are loads of websites available with all kinds of whole food recipes for free....just take a little time and try a couple dishes you think sound good....it just may be the best decision you make!

Another favorite saying of mine goes something like this:  You don't have to see the whole staircase to take one step at a time....

Here's a recipe from FullyRawKristina....even my "sugarholic husband" liked it....believe me, that's not easy!

RAW PIES

I found small pie tins in the dollar store....these work great for this recipe...if you wanted to fill a regular sized pie plate, you would probably need to double or triple this....however, it is so "rich", you don't need to eat a lot to satisfy your "sweet tooth"!  Best thing....it is SO HEALTHY!!

1 1/2 cup of dates (I used Majool dates found in any market)
1 banana
1 cup of fresh strawberries, (on sale everywhere)
small piece of coconut (I omitted this)

  1. Place dates in a food processor, pulse and then cream.  With your hands, form a crust in the bottom of your pie tin.  Save a small amount to add to step #2.  This can be very sticky, dip your fingertips in water if needed.  
  2. In a blender, put strawberries, cut up banana, coconut (if using), and a small amount of leftover "date cream".  Blend until smooth and creamy.  
  3. Pour into prepared pie tin.  Place in freezer for about one hour.  If desired, place sliced strawberries on top before serving.
