So what exactly is causing the inflammation? Inflammation is an immune response to a threat, but what's attacking our body....what is the threat? At first scientists thought it was animal protein as that causes arthritis. However, similar inflammatory responses were triggered with whipped cream, which is mostly just animal fat. After digging deeper, researches found that after a meal of animal products a person's bloodstream becomes loaded with bacterial toxins called endotoxins---hence--inflammation! Where are the endotoxins coming from?
For the first time ever, food was tested for endotoxins. What they found was endotoxins were present in pork, poultry, dairy and egg products. Of course, this is just another reason not to eat animal products....we are just talking about the inflammatory response meat has on our body.....we also can't forget about all the cholesterol, saturated fat, hormones, and antibiotics we get when we eat meat.
Today in America, cholesterol and blood pressure are household terms. We have come to accept these diseases as being normal with age...there is nothing "normal" about having high cholesterol, high blood pressure, diabetes, heart disease or any other disease. All of these diseases that are so prevalent today can be PREVENTED or STOPPED and REVERSED with our diet--this is a known FACT. By eliminating the foods that cause these issues, (meat, dairy and processed foods), and begin to feed ourselves with foods that flood us with vitamins, minerals, and antioxidants, our body will begin to heal itself without the use of any medications, and WEIGHT LOSS is the only side effect. We have to take control of our health, one bite at a time!
There have been so many clinical studies done proving the power of nutrition. Patients with heart disease, with narrowing in their arteries from plaque build up were started on a whole food plant based diet. All meat and dairy were eliminated as well as processed foods, (foods in a can or package with a paragraph of ingredients). They ate a variety of vegetables, fruits, and whole grains with an emphasis on known cholesterol-lowering foods such as oats, barley, and small amounts of nuts just to name a few. People lowered their bad cholesterol, (LDL) by nearly 30% in just FOUR WEEKS. This same diet can lower blood pressure, reverse type 2 diabetes, and fight cancer.
Vegetables, fruits, beans and whole grains work in three ways: first they provide powerful antioxidants and other cancer fighters. Second, they help trim away excess weight, and third, these same diet changes reduce the blood levels of hormones that would otherwise promote cancer growth. As it turns out, diet changes help PREVENT cancer; and they can also improve survival after a cancer diagnosis, reducing the risk of recurrence.
A diet change from the Standard American Diet, (SAD), to a Whole Food Plant Based Diet, (WFPB), is just what the doctor SHOULD order. It not only adds years to your life, but also allows you to spend those years really LIVING, instead of spending your time at a doctor's office or at the pharmacy counter.
It took many years for all of this research to be done. But the benefits of simple adjustments in your daily menu come really quickly. In no time, you will be on your way to a slimmer, trimmer, healthier body!!
Here's a really quick pita pizza that's simple and easy:
1/4 cup of hummus
1 whole wheat pita
1/4 t cracked black pepper
Toppings: fresh thyme, sliced green olives, whole roasted garlic, sun-dried tomatoes, sliced roasted red peppers
Fresh toppings: sliced basil, sliced Roma tomatoes
Spread the hummus over the pita, except for at the edge. Sprinkle with pepper. Add toppings and bake at 350 degrees for 7-8 minutes. Then spread any of the fresh toppings on the pizza after it comes out of the oven. Or, add whatever vegetables you may have on hand.
1 clove of garlic
Juice of 1 lemon
2 cups of cooked, rinsed chickpeas
1/2 t salt
Add the ingredients to a blender or food processor in order, with just enough water to achieve your desired texture, whether thick or only slightly thinner. About 2-4 tablespoons of water will do it.
