So what exactly is causing the inflammation? Inflammation is an immune response to a threat, but what's attacking our body....what is the threat? At first scientists thought it was animal protein as that causes arthritis. However, similar inflammatory responses were triggered with whipped cream, which is mostly just animal fat. After digging deeper, researches found that after a meal of animal products a person's bloodstream becomes loaded with bacterial toxins called endotoxins---hence--inflammation! Where are the endotoxins coming from?
For the first time ever, food was tested for endotoxins. What they found was endotoxins were present in pork, poultry, dairy and egg products. Of course, this is just another reason not to eat animal products....we are just talking about the inflammatory response meat has on our body.....we also can't forget about all the cholesterol, saturated fat, hormones, and antibiotics we get when we eat meat.

Here's a really quick pita pizza that's simple and easy:
PITA PIZZA
1/4 cup of hummus
1 whole wheat pita
1/4 t cracked black pepper
Toppings: fresh thyme, sliced green olives, whole roasted garlic, sun-dried tomatoes, sliced roasted red peppers
Fresh toppings: sliced basil, sliced Roma tomatoes
Spread the hummus over the pita, except for at the edge. Sprinkle with pepper. Add toppings and bake at 350 degrees for 7-8 minutes. Then spread any of the fresh toppings on the pizza after it comes out of the oven. Or, add whatever vegetables you may have on hand.
EASY HUMMUS
1 clove of garlic
Juice of 1 lemon
2 cups of cooked, rinsed chickpeas
1T tahini
1/2 t salt
water
Add the ingredients to a blender or food processor in order, with just enough water to achieve your desired texture, whether thick or only slightly thinner. About 2-4 tablespoons of water will do it.
