The ingredients are:
- Walnuts
- Dates (soaked in water for 1/2 an hour)
- Shredded coconut (optional)
- Agave nectar
- Vanilla extract
- Avocados, mashed, (about 2)
- Coca powder
- Water
- Salt
First, make the crust: In a food processor, put about 2 cups of walnuts and about 8-10 dates. The recipe called for shredded coconut to make a "lighter" crust, but I omitted it. I like the crust with just walnuts and dates. Process in a food processor until a crumbly mixture is formed and sticks together when you pinch it. Pour in a pie plate or tart shell. Press in the pie plate to form a crust.
For the filling: Place the soaked dates in the food processor and about 1/2 cup of agave nectar. Process until smooth. Then add the vanilla, (about 1-2 t), mashed avocados, and a little bit of the date water. Process again. Then add about 1/2 cup of coca powder, mix, add a small amount of water if needed to make it creamy. Mix well.
Pour into pie shell and refrigerate until the mousse is set. This can also be frozen making it more like an ice cream cake texture.
There is no flour, sugar, butter, eggs, etc. All the ingredients in this recipe are good for you. Best of all, no baking required!
I use this nut and date mixture in a food processor all the time to make crusts. You can use any nuts you have on hand, you don't have to use walnuts. Almonds or macadamia nuts would work great too. You can puree frozen fruit to make a fruit pie, just add a little pureed dates into the fruits to thicken up the mixture and the dates will add a natural sweetener at the same time. Just taste the filling you are making and adjust the ingredients according to your taste. Again, the fruit pie doesn't require any baking either. Put it in the refrigerator or freezer and there's your dessert...fast, simple and delicious!
