HOW TO BECOME HEART ATTACK PROOF

When patients want to talk about how to improve their diets, I get so excited!  People just don't realize the effect foods have on their health.  Once I start explaining not only what to eat, but why we need to eat this way, they become excited too!  The beauty of eating the "right way" not only results in weight loss, but, you can actual "heart attack proof" yourself as well as prevent the hundreds of diseases that plague so many Americans today.  How can I not be excited to share this!!!

Let me talk about heart issues.  Doctors will tell us there are two things necessary to reverse heart disease:  1.  Lose weight and become superbly nourished and 2.  Get your bad cholesterol level below 100, (there may be new updates coming up stating that LDL (bad cholesterol) should be below 70).  Physicians that are well versed in nutrition, (not all physicians are...remember, physicians are trained to diagnose a disease and prescribe a pill to alleviate symptoms), believe nutritional excellence is much more protective than a LDL level below 100 earned with a pill.  When you achieve a really good cholesterol level with nutrition, you start a whole cascade of favorable effects such as lower levels of inflammation in your body, (main culprit of so many diseases), less fat deposits all over your body including your blood vessels, lower blood pressure, lower blood sugars, etc., etc., etc.  

Dr. Joel Fuhrman (expert in nutritional excellence), states angioplasty and bypass surgery can be avoided with an aggressive approach in nutrition. He states most  patients will pursue an aggressive diet when it is supported by a knowledgeable physician who provides support and guidance.  After he spends time with his patients explaining diet vs. bypass surgery, how many patients do you think would choose to have their chests split open??  Give me the FOOD to HEAL whatever issue I have....It really and truly is that simple.  

When people realize their health is in their hands, not their doctors, and realize they have the control, many people will follow nutritional advice.  And when they start to see improvement in their overall health, their weight going down, energy soaring, they too become believers.  Remember, a Whole-Food Plant Based diet is not only heart-healthy, but it can stop and most of the time reverse any disease-state you may have.  How can I not be excited!!!

VEGETABLE-BARLEY SALAD

1/2 c barley
2 c water
2 c frozen corn kernels, thawed
1 c frozen green peas, thawed
1 tomato, chopped
1/4 c chopped scallion
1 T chopped fresh basil or oregano

DRESSING
2 T cider vinegar
2 T water
2 T soy suace
1 t Dijon mustard
1/4 t ground pepper

Place the barley and water in a small saucepan.  Cover and cook over low heat until the barley is tender, about 30 minutes.  Drain and set aside.
Combine the corn, peas, tomato, scallion and fresh herbs in a bowl.  Add the barley and toss to mix.
In a small jar or bowl, mix the dressing ingredients together thoroughly.  Pour the dressing over the salad and mix well.  For best flavor, cover and chill for at least 2 hours before serving.
