Unfortunately, we live in a society that cherishes its meat. It will take time before people come around to the benefits of eating plant-strong, but there are more people on board today than ever before. It will happen!
This is a journey about building health....it all begins with eating whole, plant-based foods. Don't make this more complicated than it has to be. There is no counting calories, don't obsess over portion sizes and don't worry about whether you are eating two, three, four or six times a day--when you are eating REAL FOOD, it doesn't matter. Just make it simple--eat whole, plant-based foods.
Pile your plates with vegetables and fruits so there is no room for processed and animal-based foods. Eat as much as you want--that's the beauty of it all. The food is clean, low-calorie, loaded with fiber, vitamins and antioxidants that will nourish your body like nothing else can.
We can stop all the obesity, diabetes, heart disease, cancers, etc., and all the drugs that go along with them. We can also stop all the endless testing and procedures we put ourselves through....all this because of a bad diet. Don't be afraid to change....a plant-strong lifestyle will show you a world where anything is possible--no drugs, lethargy, ill-health, chronic disease, and sickness.
There are so many vegetables and fruits, beans and whole-grains to choose from....you don't have to get bored with eating the same things over and over again. There are all kinds of recipes available for free...all you have to do is look for them! They are on-line everywhere...just start picking a few to try and build from there.
Everyone wants good health....the fact is, each and every one of us can have it....the choice is yours!
TOMATO BEAN CASSEROLE
2 1 lb packages of dried beans, navy or northern beans
1 large onion, chopped
3 stalks celery, diced
6 large cloves of garlic
2 T smoked paprika
2 carrots, diced
2 cans tomato paste
1 large can diced tomatoes
2 1/2 cups water
1 t Italian seasoning
1 t oregano
1 t salt
1 t black pepper
Preheat oven to 350 degrees. Soak beans overnight according to package directions. Drain and rinse beans.
In a large Dutch oven, add onion, celery, carrots, and garlic with 1/2 cup of water. Saute for 4-5 minutes until soft. Add prepared beans to veggies.
Combine smoked paprika, tomatoes, water, Italian seasoning, oregano, salt and pepper. Mix well and put in oven for 2 1/2 to 3 hours.
Serve with cornbread, green salad, and fresh fruit.
